INGREDIENTS:

1 kg cubed beef

3 tablespoons lemon juice
-
2 tablespoon olive oil
-
2 cloves garlic, finely chopped
-
1 teaspoon
Cape Culinary Kebab Seasoning
-
½ teaspoon of
Cape Culinary Mint
-
1 Green pepper
-
1 Red pepper
-
1 yellow pepper
-
1 onion
-
200g of Dried peaches or apricots
-
1 pkt wooden skewers, 20cm long

Cape Culinary Rock salt to taste
PREPARATION:

In a medium bowl combine the lemon juice,
olive oil garlic and the
Kebab Seasoning
mix well, then add the beef cubes. Marinade for 2-24 hours,
covered in the refrigerator.

Once meat is marinated you need to prepare
the skewer secondary ingredients by starting with the onion, cut
the onion over the top in to 4, once this is done separate each
layer, cut the various peppers to the same sort of flat side
dimensions as the cubed beef (Squares).

On the skewer start with one piece of
cubed beef followed by the onion then beef, then red pepper,
then beef, dried fruit, the fruit must at least be on the skewer
3 times and carry on until the stick is full of meat, fruit,
onion and pepper ending with a cub of beef. Try to keep them as
tight as possible.

Now that you have completed the skewer
process drizzle a little for olive oil over them and sprinkle
some mint and then with just one turn of grind over the rock
salt

Grill for 15 minutes or until done
remembering to turn skewers during cooking.
Just before you serve them add a squeeze of
lemon juice.
Serve with a bed of rice, bread and a salad. Enjoy! |
