Cape Shrimp Salad
This recipe is best with:

 

Ingredients:

  • 1 cup cooked couscous 
  • 1/4 cup low-fat mayonnaise
  • 1/4 cup lemon juice
  • 3 tbsp Cape Culinary Foods Dill
  • 1/2 tsp Cape Natural Sea Salt Flakes
  • 1 lb medium cooked shrimp/fake crabmeat
  • 1/2 cup diced red sweet pepper
  • 1-14 oz can artichoke hearts, drained, chopped

Preparation:

  • Combine mayonnaise, lemon juice, Cape Natural Sea Salt Flakes, Cape Culinary Foods Dill; mix well.

  • Put rest of ingredients in large bowl, toss

  • Add mayonnaise mixture, toss.

  • Cover, chill for 2 hours prior to serving.

Serve with match-stick carrots, corn may be added, for extra colour.
