Ingredients:

1 cup cooked couscous

1/4 cup low-fat mayonnaise

1/4 cup lemon juice

3 tbsp Cape Culinary Foods Dill

1/2 tsp Cape Natural Sea Salt Flakes

1 lb medium cooked shrimp/fake crabmeat

1/2 cup diced red sweet pepper
-
1-14 oz can artichoke hearts, drained, chopped
Preparation:

Combine mayonnaise, lemon juice, Cape Natural Sea Salt Flakes,
Cape Culinary Foods Dill; mix well.

Put rest of ingredients in large bowl, toss

Add mayonnaise mixture, toss.

Cover, chill for 2 hours prior to serving.
Serve with
match-stick carrots, corn may be added, for extra colour.
