CAPE STYLE BAKED FISH

This recipe is best with:

 

What You Need  

  • 6 (3/4 inch) thick fish fillets

  • 100ml fresh squeezed lemon juice; bottled lemon juice will do to.

  • 2 tbs smooth apricot jam.

  • 3 tbs meted butter.

  • 2 table spoons Cape Culinary Cape Style Rub

The How 

  • Wash fillets in a salt water solution.

  • Place 2 table spoons of Cape Culinary Cape Style Rub in a glass or plastic bowl.

  • Add the lemon juice, melted butter and the apricot jam in to the bowl. Mix the ingredients all together and let stand for 10 minutes. This allows the Rub ingredients to fuse with the other contents at the 10 minutes add the melted butter to the rest of the ingredients.

  • Coat the fish the rub using either with your hands. Make sure that you penetrate all areas ensuring that fish is well coated.

  • Pre heat the oven at 180 degrees.

  • Now place the fish in an oven proof tray and coat again.

  • Bake the fish on either side not exceeding 5 minutes per side coasting each side at your turn them over. This again depends how well done you prefer you fish cooked.

  • The longer you cook the dryer the flesh becomes.

Serve with

  • Either fluffy white or brown rice

  • Fresh garden vegetables lightly stir fried in butter.

  • And some lemon wedges for extra taste and a drizzle of strong dark Soya sauce.
