Marinated Tomatoes

This recipe is best with:

 

Serves 6

Ingredients
5 large ripe tomatoes
1/4 cup good quality olive oil or vegetable oil
1 1/2 tablespoons fresh lemon juice
1 small to medium garlic clove, minced
1/2 teaspoon
Cape Culinary rock sea salt
1/2 teaspoon
Cape Culinary oregano  
1/8 teaspoon pepper

Preparation
Peel tomatoes and cut in 1/4- to 1/2-inch slices
Arrange in a large glass bowl or dish.
Combine remaining ingredients.
Pour over tomatoes.
Chill thoroughly, gently stirring once or twice.
