MARRAKECH GRILLED LAMB

Moroccan Spices and mint give this roast an exotic flair.

Ingredients

  • 1 medium sized boned lamb roast

  • 4 tablespoons minced garlic

  • 3 tablespoons Cape Culinary freshly ground Marrakech Spice

  • 1 tablespoon Cape Culinary mint

  • 1/4 cup extra virgin olive oil

Preparation

  • Prepare a grill.

  • Place lamb in a 13 x 9-inch microwave-safe baking dish.

  • In a small bowl, mix together garlic, Marrakech Spice, mint and olive oil.

  • Spread evenly over the lamb. Cover and microwave on medium for about
    20 minutes, or until the internal temperature reaches 110° to 120°F.

  • Remove the lamb to a grill and cook on medium-high until the surface
    blackens and the meat is tender (a meat thermometer should register 155°
    for medium doneness). Let stand for at least 10 minutes before carving.

  • Serve with saffron couscous and Cape Culinary mint & lemon grass jelly to taste.
