Moroccan Spices and mint give this roast an
exotic flair.
Ingredients

1 medium sized boned lamb roast

4 tablespoons minced garlic
-
3 tablespoons
Cape Culinary
freshly ground
Marrakech Spice

1 tablespoon
Cape Culinary mint
-
1/4 cup extra virgin olive oil
Preparation

Prepare a grill.

Place lamb in a 13 x 9-inch
microwave-safe baking dish.

In a small bowl, mix together garlic,
Marrakech Spice, mint and olive oil.

Spread evenly over the lamb. Cover and
microwave on medium for about
20 minutes, or until the internal temperature reaches 110°
to 120°F.

Remove the lamb to a grill and cook on
medium-high until the surface
blackens and the meat is tender (a meat thermometer should
register 155°
for medium doneness). Let stand for at least 10 minutes
before carving.

Serve with saffron couscous and Cape
Culinary mint & lemon grass jelly to taste.
